PET vs. PP vs. Bagasse: How to Choose Takeout Containers

Choosing the wrong container material is one of the most expensive small mistakes a restaurant can make. A clear clamshell that warps when hot pasta goes in. A compostable plate that a customer microwaves and then complains about. A case of foam containers that can no longer be legally sold in California. Each one costs you product, labor, and sometimes a review.
This guide covers the three materials that make up the vast majority of foodservice packaging today — PET, PP, and bagasse — and gives you a straightforward way to decide which one belongs in your kitchen.

PET — when presentation is the product
PET is the crystal-clear plastic used for sushi trays, salad bowls, cold deli containers, and bakery clamshells. Nothing else on this list shows off food the way PET does, which is why it dominates any category where the customer decides with their eyes before they order.
The hard limit is heat. PET softens and warps well below boiling — put hot soup or a fresh-off-the-line stir fry into a PET container and it will deform, sometimes badly enough to break the lid seal. It is not microwave safe, and it should never go in an oven.
Where PET earns its keep:
- Sushi and sashimi — hinged trays keep rolls visible and intact through delivery
- Salads and poke bowls — clarity sells freshness
- Cold deli and grab-and-go — retail display cases
- Bakery — cakes, pastries, cookies

PP — the workhorse for hot food
Polypropylene is the material to reach for when food goes out hot and may get reheated. It handles high temperatures without deforming, it is microwave safe, and it is far more impact-resistant than PET — a dropped PP soup container usually survives; a PET one often cracks.
The tradeoff is clarity. PP is translucent rather than crystal clear, so it works better where the customer already knows what they ordered than where the container is doing the selling.
Where PP earns its keep:
- Soups, broths, and noodle dishes — heat plus liquid is PP's home ground
- Hot entrées and rice plates — no warping, no leaks
- Meal prep and catering — customers reheat directly in the container
- Sauces and dressings — portion cups that survive both fridge and microwave
One practical note: PP containers and lids are usually engineered as a matched system. Mixing a PP base with a lid from a different line is a common source of leak complaints. Check the diameter and the lid family before you order.
Bagasse — compostable, and genuinely functional
Bagasse is the fibrous material left over after sugarcane is pressed for juice. Molded into plates, bowls, and hinged containers, it produces packaging that is sturdy, heat-tolerant, microwave safe, and commercially compostable.
Early-generation compostables earned a reputation for going soggy. Modern bagasse does not behave that way — it holds up to hot, saucy food better than most people expect, and it has a substantial, matte feel that reads as more premium than plastic to a lot of diners.
Two things to verify before you buy any compostable product:
- Certification. "Compostable" is a marketing word unless it is backed by a standard. Look for ASTM D6400, ASTM D6868, or OK compost HOME. BPI certification is the most commonly recognized mark in the US.
- PFAS. Older bagasse used PFAS compounds for grease resistance. Several states have banned PFAS in foodservice packaging, and buyers increasingly ask about it directly. Confirm any bagasse product you buy is PFAS-free.
The honest limitation: bagasse is opaque, so it is the wrong choice when the food needs to be visible. And "commercially compostable" means an industrial composting facility — it is not the same as home composting, and it is not recyclable in a curbside bin.
What California restaurants need to know
Two pieces of California law affect this decision, and they are frequently confused with each other.
The foam ban is already in force. Expanded polystyrene (EPS) foodware — foam cups, plates, clamshells — has been prohibited from sale and distribution in California since January 1, 2025. If you are still working through old foam stock, that supply chain is closed. This one affects you directly.
SB 54 mostly targets producers, not restaurants. Senate Bill 54, the Plastic Pollution Prevention and Packaging Producer Responsibility Act, requires that all single-use packaging and plastic foodservice ware sold in California be recyclable or compostable by 2032. Its final regulations took effect May 1, 2026. The compliance, registration, and fee obligations fall on "producers" — a term the law defines broadly, but which generally means brand owners and manufacturers rather than the restaurant buying containers to serve its own food.
What this means practically: you are unlikely to be filing SB 54 paperwork, but the products available to you will shift over the next several years as suppliers redesign toward recyclable and certified-compostable materials. Restaurants that move early avoid doing it under deadline pressure.

A decision framework you can actually use
Skip the material names and start with the food:
- Does it go out hot, or will the customer microwave it? → PP or bagasse. Not PET.
- Does the customer need to see it before buying? → PET. Clarity is the whole point.
- Is sustainability part of how you present your brand? → Certified PFAS-free bagasse.
- Is it soup, or anything that will slosh? → PP, with a matched lid.
- Is it going in a display case? → PET.
Most kitchens end up carrying two materials, not one. A sushi bar runs PET for the cold case and PP for miso and udon. A taqueria runs bagasse for plated combos and PP for salsas and consommé. That is normal — trying to force one material to do every job is what produces the warped-container complaints.

Frequently asked questions
Can I microwave a PET container?
No. PET softens and warps at temperatures well below what a microwave produces. Use PP or bagasse for anything that will be reheated.
Is bagasse really better for the environment than plastic?
Bagasse is made from an agricultural byproduct and is commercially compostable when certified to ASTM D6400 or an equivalent standard, which plastic is not. The benefit is real but conditional — it depends on the product actually reaching an industrial composting facility. In areas without commercial composting access, the advantage is smaller.
What is the difference between compostable and biodegradable?
"Compostable" is a defined, testable standard with a required timeframe and end result. "Biodegradable" has no such standard and can be applied to almost anything given enough time. Treat "biodegradable" as a marketing claim and look for a compostability certification instead.
Can PP containers go in the freezer?
Yes. PP handles both freezer and microwave temperatures, which is what makes it the most versatile of the three for meal prep and catering.
Does the California foam ban apply to my restaurant?
The prohibition covers the sale and distribution of expanded polystyrene foodware in California, in effect since January 1, 2025. In practice this means foam products are no longer available through the supply chain. Check with CalRecycle or your local jurisdiction for how it applies to your specific situation.
